His career took him across Italy, England, and Australia, working in some of the finest hotels, restaurants, and resorts. Eventually, Carlo and his family settled in Byron Bay, where they have lived for over 20 years. Positano to Byron Flavours was born from Carlo's desire to share the flavours and traditions of his homeland with the local community.


The business offers a customised menu of homemade dishes, prepared with the freshest, locally-grown ingredients. From sourdough and gnocchi to homemade pasta, everything is made from scratch, ensuring an authentic Italian dining experience.


Carlo's menu celebrates the beautiful seafood of the Byron area, featuring dishes like seafood carpaccio, linguine with Ballina prawns, and seafood risotto. His barbecues, with a Mediterranean twist, are a hit at events, offering marinated meats or fish, and mixed vegetables cooked on wood charcoal.


Beyond food, Carlo's expertise as a bartender and sommelier adds a special touch to any event, with a variety of Italian-inspired finger foods and expertly paired wines and cocktails.
