Our Story

‘Positano to Byron Flavours’ was born from my vision to bring a little of Positano to Byron Bay! My name is Carlo and for many years my family and I have called Byron Bay our home. I am originally from the idyllic tourist town of Positano on the Amalfi Coast in Italy and come from a long line of foodies. My parents had a passion for cooking and they believed that success in the kitchen was due to three key things: fresh produce, passion and ‘fantasia’ or imagination! 

 

Growing up in a family of eight, I developed a passion for food from a young age. My home was always full of family and friends and meal preparations lasted all day! My father was a professional fisherman so the catch of the day was always a big favourite at family meals! 

I was initiated into the hospitality industry at a young age working at one of the most famous European small boutique hotels, Il San Pietro di Positano. Here in Byron Bay I have worked in events management for the past 14 years and I’ve always enjoyed the dynamism of this line of work particularly meeting new people!

 

Inspired by the culinary tradition of Positano and sourcing some of the best locally-grown produce and fresh seafood & meats of the Byron Bay area I want to share my passion for cooking with you!
